What wonderful Easter weather we had – absolutely glorious. And the sun has encouraged the rhubarb in my veg patch to go mad, already producing more than I can use. So what to do? Well, here are some of my favourite things to make with rhubarb:

Rhubarb Vodka (see recipe below)

Rhubarb Sponge

Rhubarb and Orange Jam

Rhubarb Vodka: simply chop 800g-1kg rhubarb and put in a sterilised jar 400g white sugar. Put the lid on, shake and leave for a while for the sugar to draw the juice out of the rhubarb.

Add 800ml vodka (or you could use gin), seal and shake. Leave for about 4 weeks before drinking. Strain through a sieve lined with muslin to keep it clear. Delicious over ice as an aperatif.
